 Ice Cream Galore Recipes

Rich Chocolate Ice Cream
Serves 4-6

1 1/4 cups milk
1 teaspoon vanilla extract
2/3 cut finely chopped bittersweet chocolate (70% cocoa solids)
4 egg yolks
1/2 cup superfine sugar
1 cup whipping cream

1. Put the milk and vanilla extract in a saucepan and bring to a boil.  Sprinkle with the chopped chocolate and leave for 10 minutes.  Stir until the mixture is smooth and the chocolate has melted."
2. Beat the egg yolks with the superfine sugar until light and fluffy.  Pour the chocolate mixture over the eggs and then pour back the combined mixture into the pan.  Stir over a gentle heat until the mixture is thick enough to coat the back of a spoon.  Allow to cool.
3. Very lightly whip the cream and stir into the cooled chocolate.  Church in an ice-cream maker according to the manufacturer's instructions until the ice cream is on the point of setting (thick) and then spoon into a suitable freezing container and freeze until hard (almost at once if making in a machine, but 5-6 hours if making by hand).
4. Soften at room temperature, 10-15 minutes, before serving.

Milky Way Ice Cream
Serves 4

5 Milky Way bars (1 1/2 oz. each), chopped
3/4 cup milk
1 3/4 cups whipping cream

1. Put the chopped Milky Ways in a saucepan with the milk.  Stir over a gentle heat until the confectionary has melted.  Remove from the heat and allow to cool and then stir in the cream.
2. Churn in an ice-cream maker according to the manufacturer's instructions until set (thick) and then spoon into a suitable freezing container and freeze until hard (almost at once if making in a machine, but 5-6 hours if making by hand).
3. Soften at room temperature, 10-15 minutes before serving.
Ice-cream tip: Buy an extra Milky Way bar, chop it up and serve the ice cream topped with toasted chopped hazelnuts and bits of candy bar.

Green Tea Ice Cream
Serves 4-6

3/4 cup superfine sugar
2 cups water
Juice of 1 lemon
3 green tea bags
1 1/4 cups whipping cream

1. Put the sugar, water, and lemon juice into a saucepan and bring to a boil, stirring, to dissolve the sugar.
2. Add the tea bags, then remove from the heat and allow to infuse for at least 30 minutes.  Remove the tea bags and cool completely.
3. Pour the tea syrup into an ice-cream maker and churn according to the manufacturer's instructions until just starting to freeze and thicken.  Pour in the cream and continue to churn until set (thick), then spoon into a suitable freezing container and freeze until hard (almost at once if making in a machine, but 5-6 hours if making by hand).
4. Soften at room temperature, 10-15 minutes before serving.

Quick Apple Ice Cream
Serves 4-6

1/4 cup superfine sugar
1 1/4 cups ready made custard
2/3 cup whipping cream
FOR THE COMPOTE
1 1/4 lb dessert apples, peeled, cored and cut into small chunks
6 tablespoons water
1-2 tablespoons superfine sugar

1. First make the compote.  Put the apples and water into a saucepan and cook over a gentle heat until the apples are soft, about 10-15 minutes.
2. Cool before transferring to a food processor and blend until smooth.  Taste and add sugar if the compote is a little tart.
3. Mix all the ingredients, including the compote, together in a bowl.
4. Transfer to an ice-cream maker and churn according to the manufacturer's instructions until set (thick).  Spoon into a suitable freezing container and freeze until hard (almost at once if making in a machine, but 5-6 hours if making by hand).
5. Soften at room temperature, 10-15 minutes before serving.
